Van Der Linde – Changing the Linden Culinary Landscape

Van der Linde – affectionately known by its customers and the locals in the area as VDL – has quickly become part of Linden’s burgeoning culinary scene and offers diners something distinctive and special.

Named after the man whose farm now makes up most of the suburb of Linden in Johannesburg, Johannes van der Linde, VDL is a light and airy restaurant that also incorporates a bakery, a deli and a stunning cocktail bar. The restaurant offers separate breakfast, lunch and dinner menus as well as a dedicated vegan menu. Executive chef Amori Burger presides over the open-plan kitchen and says her menus are  simple yet well executed, with some daring and interesting flavours as well as classics with a twist.

“Our aim is to make people feel part of the whole process which is why we have open cooking spaces and prep areas.”On the newly revised dinner menu are classics with a twist, including pan fried sea bass with yellow curry and Kashmiri masala pineapple, French-trimmed pork chop with Dijon mustard mash, red onion soubise and Kalamata olives, kudu loin with roasted parsnip, chasseur sauce and honey roasted beetroot and deboned quail with apricot stuffing, mashed potato, roasted fig, pancetta and apple cide jus. Burger’s starters feature such tempting dishes as burrata and candied pumpkin or soft shell crab and wakame seaweed or charcoal grilled lambs’ tails as well as roast king oyster mushrooms amongst others.

For those who like something a little sweet to end the meal, they can choose from a fynbos-poached stone fruit dessert, served with EVOO sabayon and basil sugar or – the house speciality – a jasmine mousse served with candied pineapple and coconut crumble.
