CHEF ALBERTO CUZZIT THE RITZ-CARLTON OKINAWA Truffle & Cocoa Fettucine

There is nothing easier than making delicious, truffles &  Cocoa ferrucine.

INGREDIENTS

  • 500gm Strong flour 
  • 100gm Semolina                         
  • 100gm Cocoa Powder
  • 100gm  Egg 
  • 20gm Truffle (Minced) 

 

METHOD

  1. Mix Semolina, strong flour, egg, mixed truffle and cacao powder.
  2. Raise the dough for 1 night in the refrigerator.
  3. Cut in 5 – 8 millimeter width and make fettucine.

 

 INGREDIENTS

Braised Pork

  • 1000gm / kilo Pork cheeks 
  • 750gm Red Wine 
  • 200gm Tomato 

 

 METHOD

  1. Marine pork and vegetables in red wine for 1 day.
  2. Boil in low temperature for 6 hours.

 

 Sauce

  • 50gm  Parmesan cheese 
  • 100gm Cream 

Mix parmesan  cheese and cream

Other

  • 1gm  Purple yam (Finely cut and fried) 
  • 1gm Truffle
