In greengrocers’ and farmers’ markets around the country, signs of spring are all around. Give up the winter warmers and make good use of the fresh, vibrant new vegetables and fruits in season. For me Spring introduces myriads of colour and lighter foods into our everyday meals.

Indulge in a choice of salads and here are a few excellent ideas:

  1. Fava Bean & Asparagus Salad

Green beans! Green asparagus! Green pistachios! … You get the idea—this salad is a celebration of spring. If you can’t find fava beans, substitute English peas or sugar snap peas instead
