LEMON POSSET

This is Fresh, Easy and Delicious.

INGREDIENTS:

  • 600 ml cream
  • 3 lemons, zested and juiced (85ml juice)
  • 200 g castor sugar
  • 3 tsp mascarpone

METHOD:

  1. Bring the cream, sugar and zest to the boil.
  2. Add in lemon juice and mascarpone, stir and de-cant into individual serving dishes.
  3. Allow to cool and then refrigerate for 4 hours.
  4. Serve with fresh fruit, meringues or shaved white chocolate.
