Veronica started her career in 1999 at The Mount Nelson as an apprentice under Garth Strobel. After qualifying Veronica left to work in Five Star establishments in England. She returned to Cape Town in 2008 and started at Ellerman House in July.
Veronica says at Ellerman House boredom is never an issue as new menus and dishes are constantly being created. She loves the genuine feeling of family between the various departments whose combined goal is guest satisfaction.
Veronica says the most important cooking principle is to be true to the products used, as it is a privilege to be working with the best products available. She insists that the greatest care and attention is given to the product

It’s also a piece of uniquely South African hospitality in Africa. This is what head chef Veronica Canha-Hibbert has captured in her food. Five years in Europe and seven years at Ellerman House has created unique tastes. “You need to reflect the feel of a place, my recipes are not transferable,” says Veronica.
“I always ask myself whether I can create ingredients better in-house first, rather than buy it in. Usually we do better ourselves.”
The freedom to buy any ingredient she wants and toexplore creative possibilities has pushed the boundaries of taste, with frequent guests often planning their meals with her. An artist at heart, Veronica believes her best work happens in the intimate confines of the kitchen, where the creations of her staff from South Africa, Europe, Congo and Zambia take shape.
