This one is for all of you who love a spectacular Fillet! Try out this Fillet of Beef With a Side of Pomme Frites made by Chef George Lithgow from The View Hotel

Ingredients:

1 x tablespoon butter

2x cloves Garlic

250g Fillet of beef

150g Mushrooms

150ml thickenedCream

Salt & pepper

Potato chips

Method To make the sauce: 

1. Heat the butter in a saucepan add sliced mushrooms and stir fry until lightly browned, reduce heat add cream, garlic, salt and pepper, cook for 7minutes until sauce has been reduced

Method Cook the fillet:

1. Place your fillet (cleaned & trimmed) in a HOT pan with a little bit of oil, seal the sides of the fillet.

2. The time you cook your fillet is dependant on how you want it cooked – Rare, Medium or well done.

3. In the meantime place your potato chips either hand cut yourself or bought, in hot oil – be careful of the hot oil – if you hand cut them yourself I suggest you precook them slightly in boiling water.

Plating:

Once your fillet is cooked to the way you like it, plate it. You can cut along the fillet half way down to allow the sauce to sink in. Pour the mushroom sauce over the fillet. Once the chips are cooked & crispy brown place on the plate with the fillet. Garnish with wild rocket or Fennel
