Receiving his award at the glittering ceremony held this evening at Thunder City, Dale-Roberts said: “I feel enormously proud of what we have achieved. This has been a tough year but I have been so encouraged by the way our team has pulled together and continued to move forward. I love my craft, it brings me enormous happiness and I am grateful to be doing what I love.”
This award comes in the wake of The Test Kitchen gaining number 48th spot in The World Restaurant Awards in April this year. Constantly pushing boundaries, Dale-Roberts caused a stir when opening the Test Kitchen at the end of 2010 in the gritty and at the time relatively unkown, Woodstock neighbourhood of Cape Town, which is filled with pockets of urban cool gentrification.
In the restaurant’s impressive open kitchen, Dale-Roberts holds silent sway with his perfectionism juxtaposing with his playfulness which results in extraordinary dishes that push all boundaries. Seasonal, local ingredients are treated with utmost respect and technical mastery to create feasts not only for the palate but for the eyes. These edible works of art are enhanced by the use of bespoke local artisan ceramic-ware, and the space is also a celebration of artists and designers, from the prints on the walls to chairs and lighting creating a modern, vibey yet intimate feeling.

The main attraction at The Test Kitchen are the multi-course tasting dinner menus where Dale-Roberts’s vast international experience, his Asian inspiration and current South African roots play marvellously off each other. From dishes such as African Rosti, served with amasi curd to Lamb Smiley, a subtly deconstructed dish, ingredients are expertly paired and coaxed to reveal multiple layers of flavour. One of the menu highlights is Foie Gras Four Trees. Remarkable care and attention to detail creates a showstopping dish: pears are compressed in oak; foie gras is grilled over pine needles; chestnuts are roast and blended to create an essence; duck breast is basted with maple syrup.
